1 pot Gnocchi with Arugula Mushrooms and Pesto

This side dish can easily be amped up into a main dish by adding grilled or rotisserie chicken, pork tenderloin, or chicken apple sausage.

What You Need

1 pkg Gnocchi

2, 5oz pkgs Arugula

4oz jar Pesto

2, 8oz pkgs Mushrooms

Spray Oil of Choice

 How It’s Made:

  1. Cook gnocchi according to package directions

  2. Roughly chop mushrooms 

  3. Place a large pan over medium heat

  4. Quickly spray with oil

  5. Place mushrooms in pan to wilt (about 8-10 minutes)

  6. Add arugula and cook until all is wilted

  7. Add gnocchi and stir

  8. Add pesto to coat and evenly disperse
