1 pot Gnocchi with Arugula Mushrooms and Pesto
This side dish can easily be amped up into a main dish by adding grilled or rotisserie chicken, pork tenderloin, or chicken apple sausage.
What You Need
1 pkg Gnocchi
2, 5oz pkgs Arugula
4oz jar Pesto
2, 8oz pkgs Mushrooms
Spray Oil of Choice
How It’s Made:
Cook gnocchi according to package directions
Roughly chop mushrooms
Place a large pan over medium heat
Quickly spray with oil
Place mushrooms in pan to wilt (about 8-10 minutes)
Add arugula and cook until all is wilted
Add gnocchi and stir
Add pesto to coat and evenly disperse
