4 Fish Recipes to Kick Off Lent!

Fish can be an intimidating protein to cook but it’s quite the opposite if you set yourself up for success. With a desired internal temperature of 145 degrees, fish can bake quickly depending on the thickness so the first and most important tip we have when baking fish is to make sure all of your pieces are about the same thickness. The second tip is to take a few shortcuts with side dishes to let your full attention be on the fish. Many of us dabble with salmon and shrimp but have you ever wandered outside of that realm? Jamaican Jerk Sea Bass

Ingredients

  • 1 lb Chilean Sea Bass
  • ¼ c. Jamaican Jerk Seasoning
  • Salt and Pepper as desired
  • 1 Taylor Farms Salad kit of choice
  • 1 pkg. Minute Brown rice & Quinoa 

Directions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper
  3. Season fish with Jamaican Jerk seasoning (Salt and Pepper as desired)
  4. Bake for 15-18 minutes or until internal temperature reads 145
  5. Microwave brown rice and quinoa according to package directions
  6. Toss together salad ingredients in a separate bowl according to package directions

 

Baked Snapper with Asparagus and Romesco Sauce

Ingredients

  • 1 lb Snapper
  • 2 Tbsp. olive oil
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 bunch Asparagus
  • 1 jar Roasted Red Peppers
  • 1 lemon, juiced and zested
  • 3 cloves garlic
  • ⅛ c. almonds
  • 1 tsp. Paprika
  • A pinch of Cayenne pepper
  • Salt and pepper as desired

Directions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper
  3. Season fish with olive oil, salt, and pepper
  4. Chop ends off the asparagus and place around fish on the pan
  5. Bake for 15-20 minutes or until internal temperature reads 145
  6. In a blender combine roasted red peppers, garlic, lemon, almonds, paprika, and cayenne pepper and blend until smooth (about 3 minutes)

 

Lemon Pepper Basil Halibut With Green Beans and Cous Cous

Ingredients

  • 1 lb Halibut
  • 2 Tbsp. lemon pepper
  • 2 Tbsp. dried basil
  • Salt and Pepper as desired
  • Near East Basil and Herb Cous Cous
  • Signature Kitchen Green Beans

Directions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper
  3. Season fish with lemon pepper and basil (Salt and Pepper as desired)
  4. Bake for 15-20 minutes or until internal temperature reads 145
  5. Microwave green beans according to package directions
  6. Cook cous cous according to package directions

 

Garlic Parmesan Cod with Broccoli and Farro

Ingredients

  • 1 lb Cod
  • 1 Tbsp. pre-chopped garlic
  • 1/2 c. parmesan cheese
  • Salt and Pepper as desired
  • 2 heads broccoli
  • 1 pkg Alessi Porcini Mushroom Farro

Directions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper
  3. Season fish with garlic and parmesan cheese (Salt and Pepper as desired)
  4. Chop broccoli into bite-sized florets and place around fish on pan
  5. Bake for 15-17 minutes or until internal temperature reads 145 and tops of broccoli are lightly browned
  6. Cook farro according to package directions
