5 minute Parmesan Lentil and Mushroom Side Dish

In a side dish rut? This one has quickly raced to the top of our family favorite weekly rotation. The lentils pack a protein punch and the mushrooms add a familiar meaty texture while subtly being the star of this dish and getting in a vegetable

What You Need

4 Tbsp. Parmesan Cheese

1 can Lentils

2, 8oz pkg. Mushrooms

3 cloves Garlic

1 small Onion

1 Tbsp. Garlic powder

½ Tbsp. Onion powder

½ tbsp. Ground Thyme

Salt and pepper as desired

 How It’s Made:

  1. Dice onion
  2. Heat pan over medium heat and saute onions until translucent about 7 minutes
  3. Mince mushrooms and garlic 
  4. Add mushrooms, garlic, garlic powder, onion powder, and thyme to pan and saute for an additional 10 minutes
  5. Drain and rinse lentils
  6. Mix in lentils and heat through
