Avocado Caprese with Chicken

What You Need

  • 1 lb Chicken breasts
  • 1 avocado
  • 1 pint cherry tomatoes
  • 20 basil leaves

 How It’s Made:

  1. Cut cherry tomatoes in half
  2. Cut avocado in ½ inch cubes
  3. Chiffonade basil leaves
  4. Have a grill pan oven medium high heat and cook chicken for about 6 minutes per side (or until internal temperature reaches 165)
  5. Top chicken breasts with tomato mixture
