Byond Ground Beef and Zucchini Tamale Pie

No meat? No problem! This plant based tamale pie is one for the whole family to enjoy with a medium spicy kick!

What You Need

  • 1 lb. Plant-based Ground meat
  • 2 medium Zucchini
  • 5oz Shredded carrots
  • 1 can Corn, no salt added
  • 3 Tbsp. Taco seasoning
  • 1 box jalapeno Cornbread
  • 1 Egg
  • ⅔ c. Milk

 How It’s Made:

  1. Preheat oven to 350 degrees
  2. Brown the plant-based meat and remove from pan
  3. Chop zucchini and add to saute pan
  4. Add in carrots, zucchini, and taco seasoning
  5. Once vegetables are soft, add back in the impossible beef and combine
  6. Make cornbread according to package directions and add in one can of corn
  7. Place mixture in an 8×8 pan
  8. Place cornbread on top
  9. Bake for 35 minutes
