Black Bean Tacos With Forager Avocado “Cream”

Plant Based options are everywhere and while it’s a trendy name it’s nothing new. What is new are the layers of flavor that go into this type of cooking. Take this recipe for example – there is no shortage of heat or creaminess

What You Need

  • 2 cans Black beans
  • 6oz hot salsa
  • 1 Tbsp. Chili powder
  • 1 Tbsp. Cumin
  • 1 lime
  • 12 Corn tortillas
  • 1 Forager yogurt
  • ¼ bunch Cilantro
  • ¼ Jalapeño
  • ½ large Avocado
  • 2 cloves garlic
  • Salt and pepper as desired
  • Optional toppings: Cherry tomatoes, Shredded lettuce, Daiya Cheese, Cilantro

 How It’s Made:

  1. Drain and rinse beans
  2. Zest and juice lime over beans
  3. In a bowl mix together salsa, chili powder, and cumin and pour over beans and mix together
  4. In a blender combine yogurt, cilantro, jalapeno and avocado
  5. Place beans in corn tortilla and top with sauce
  6. Add additional toppings as you like
