Canned Salmon Cakes

Saturdays are special this October since it’s National Seafood Month! Striving to consume seafood twice a week for its health benefits is a great goal if you’re not consuming any on a regular basis. It can also be part of a value based meal if you watch sales and opt for the canned version packed in water which is how we’ve created these!

What You Need

  • 1 lb canned salmon
  • 2 Green onions, diced
  • 1 clove garlic, minced
  • 1 Tbsp. Dill
  • 2 ½ Tbsp. full fat greek yogurt
  • 1 Lemon, zested and juiced
  • 1 tsp. Dijon
  • 1 egg
  • ¼ tsp. Cayenne pepper
  • 2 Tbsp. fresh parsley
  • 2 Tbsp. olive oil

 How It’s Made:

  1. Combine all ingredients, besides olive oil, in a bowl and mix
  2. Heat a pan and olive oil over medium-high heat
  3. Scoop out ⅓ cup per cake and place in pan and pat down to ½ inch thickness in pan and proceed to cook for 4 minutes per side to develop golden brown crust
