Easy Breakfast Casserole

Morning casseroles are our jam during a crazy winter season. They make the weekend mornings more smooth, when made ahead or reheated and get the whole family off on the right foot.

What You Need

 

6 Whole Eggs

6 (or ¾ c.) Egg Whites 

1 lb. Frozen Spinach, thawed and squeezed

2 oz. Goat Cheese

½ lb Hot Italian Sausage

½ Medium Onion

3 Cloves Garlic

1 Tbsp. Olive Oil

¼ c. Ultrafiltered Fat Free Milk

Salt and Pepper as Desired

 How It’s Made:

  1. Dice onion
  2. In a medium to large cast iron skillet heat oil
  3. Add garlic and onion and saute for 5 minutes
  4. In a bowl whisk together the milk, eggs, and egg whites
  5. Preheat oven to 350 degrees
  6. Add spinach to pan and mix
  7. Pour in egg mixture and quickly stir once around  the pan to evenly incorporate
  8. Crumble goat cheese pieces around the pan and place in oven
  9. Bake for 17-20 minutes or until eggs set
