Kale and Melon Salad

This light salad gives us big summer vibes with the pops of fresh mint throughout the dish. And with melons being in season right now, it’s the perfect sweetness to offset the slight bitterness of the kale. This one is a big party pleaser but if you want to make this into more of a meal add steamed shrimp with blackening season and a minute quinoa and brown and rice cup.

What You Need

8 c. Kale

1 pkg. Mint

6 oz. Feta

1 c. Cantaloupe

4 Tbsp. Pistachios

 How It’s Made:

  1. Wash kale and pat dry
  2. Remove kale leaves from stem, tear into bite-sized pieces, and place in large bowl
  3. Mince mint and sprinkle over kale
  4. Cut cantaloupe into half inch pieces and place on top of kale
  5. Roughly chop pistachios
  6. Garnish with feta and pistachios
