Mediterranean Pita Chicken Nachos
This no cook meal has us jumping up and down for joy! Our mama hearts love not turning on a stove to sweat over mentally or physically. It’s easy clean up and a weeknight win. You can pull out any leftovers for this as well (extra cucumbers, shredded carrots, etc).
What You Need
4 servings Pita chips
12 oz rotisserie chicken
5 sundried tomatoes
1 10oz pkg Cherry Tomatoes
5 large lettuce leaves
4 tsp. Capers
⅓ c. Plain non-Fat Greek Yogurt
3 Tbsp. Zattar
2 Tbsp. Sundried Tomato Oil
¼ c. Feta Cheese
How It’s Made:
- Slice sundried tomatoes in half
- Thinly slice lettuce
- On a large baking sheet lay down a piece of parchment paper
- In a small bowl combine the yogurt, zattar, and sun dried tomato oil and mix
- Place the pita chips on the sheet
- Layer on the chicken, cherry tomatoes, sundried tomatoes, lettuce, and capers
- Dallop the yogurt dip everywhere
- Sprinkle the feta cheese on top
