National Cherry Cobbler Day

It’s national cherry cobbler day and since cherries are in season we thought we’d capitalize! Cherries are a fantastic fruit by themselves or made into a savory sauce or in this case, dessert. We are lightening it up a bit by creating more of a crisp topping instead of the traditional drop biscuit or heavy dough. Great for breakfast with greek yogurt or dessert with ice cream!

What You Need

½ c. canned cherries drained

1 tsp. Swerve Granulated sugar

1 Tbsp. cassava flour

1 ½ Tbsp. Rolled Oats

½ tsp. Swerve Granulated sugar

1 Tbsp. cold butter, diced

 How It’s Made:

  1. Mix together the cherries and flour to coat evenly and place in a small microwave safe bowl
  2. In a separate bowl, combine oats, sugar and butter. Mix quickly as to not melt the butter.
  3. Pour on top of cherries and microwave for 1 minute
