National Coffee Day
Who doesn’t love breakfast for dinner? We’re big fans especially when we can include a few vegetables in this mix within an omelette, or maybe a fun green smoothie on the side, or even mixed into cheesy grits. But seriously, breakfast is one of those versatile meals that can be good at any time of day be it breakfast tacos, waffles, pancakes, oatmeal, grits, cereal, french toast, toast, biscuits, scones, hash browns, donuts, muffins and the list goes on for carbohydrates! You can make them sweet or savory and that’s the beauty of it. All breakfast, no matter what time of day it is, goes exceptionally well with coffee! Seeing that it’s National Coffee Day let’s dive right into it.
Last year we talked about the fun flavor notes of coffee, how to pair it, as well as taste some of the notes and had an amazing herb frittata with it. So let’s talk about decaf this year. If you’re indulging in coffee later at night it’s important to note that the caffeine may have an affect on your ability to fall asleep since it’s generally known to give people a boost in their morning cup. Decaf coffee, compared to it’s fully caffeinated version, has been seen to lower anxiety, lower risk of type 2 diabetes and cardiovascular disease. The best part is that it contains the same antioxidants as regular coffee, but slightly lower amounts due to the extraction process!
What You Need
2 large Apples
1 Tbsp. Canned Chipotles in Adobo
½ lb Frozen Chicken tenders (about 4 pieces)
8 Frozen Kodiak Cakes Buttermilk Waffles
How It’s Made:
- Cook Chicken according to package directions
- Cook Waffle according to package directions
- Heat a small skillet over medium-high heat
- Peel, core, and dice apple
- Saute in a pan until soft (about 10 minutes)
- Add in chipotles
- Plate waffle on the bottom, chicken layered on, and then the chipotle apples on top
