Plant Based Quesadillas

These plant based quesadillas are sure to have the family requesting seconds! They are full of protein and fiber sure to keep them full until bed (yay for no bedtime snacks *hopefully* – one less thing on your plate). To make things a little quicker we opted for a can of already mashed black beans and fresh-cut onions but you most certainly can add on time if you’ve got it with less pre-prepared items.

What You Need

8 La Tortilla Factory Low Carb Whole Wheat Tortillas

1 c. Siete Refried Black Beans

3 c. Mushrooms

3 c. Freshcut Peppers and Onions

2 c. Shredded Cheese

Optional Toppings: Guacamole, Greek Yogurt, Pico De Gallo, Cheese

 How It’s Made:

  1. In a medium pan, saute pepper and onions

  2. Roughly mince mushrooms

  3. Add mushrooms to pan and saute

  4. On four of the tortillas spread the blackbeans across evenly

  5. Evenly distribute the mushroom mixture across the black beans

  6. Top evenly with cheese

  7. Put the plain tortilla on top and put back in the pan over medium heat and brown up for 5 minutes on each side
