Spring Foccatia Bread Art

Spring is in full swing and so are the dietitians with their little sous chefs. Making your own bread had a moment in 2020 and we are still all about it. This recipe is a fun way to not only get kids in the kitchen but use the random vegetable leftovers (or intentionally buying these ingredients) to reduce food waste and have a fun project. Before you start, give yourself enough time to make this one as it takes about 2.5-3 hours, but don’t worry about 2-2.5 hours of that is spent letting it rise!

What You Need

2 c. Water

1 pkg Yeast

2 tsp. Honey

1 tsp. Salt

5 C. All-Purpose Flour

½ Tbsp. Butter

6 Tbsp. Olive Oil

½ Bell Pepper

2 Sweet Baby Bell Peppers

5 cherry tomatoes

4 sprigs Parsley

1 Green Onion

½ Tbsp. Morton’s Flakey Sea Salt

 How It’s Made:

  1. Heat the water to 110 degrees
  2. Add the yeast and honey to the water and stir
  3. Let sit for 5 minutes
  4. Add liquid to a medium bowl and add flour and mix until stringiness of flour is not longer there
  5. Coat a large bowl with 4 tablespoons of olive oil and rub every inch of it
  6. Add the dough to this bowl
  7. Cover and let rise for 1 hour in the refrigerator (it’s ready when it doubles in size)
  8. Grease a 9×13 pan with butter
  9. Place 1 tablespoon of olive oil in the center of the pan
  10. Place the dough in the center of the pan and let it rise uncovered in a warm place for 1-3 hours (you will know its ready when you press it and it won’t spring back quickly)
  11. Slice tomatoes in half
  12. Thinly slice strips of bell pepper
  13. Slice bell pepper in coins
  14. Tear Parsley away from stem
  15. Cut green onion in half and then again in half
  16. Make your flower design on the counter or cutting board using the green onion as the stem, parsley as the leaves, and bell peppers as the flower
  17. Preheat oven to 425
  18. Place flower design on the dough and drizzle with 2 tablespoons of olive oil and sprinkle with flakey sea salt
  19. Bake 30-35 minutes, or to desired crispiness
